Meatless Monday: Vegan Pesto

To make this vegan pesto, you first put a clove of garlic and 1 cup of your favorite nuts in a food processor, and blend until a nice crunch. Next add fresh basil by the handful and blend. Then drizzle in olive oil, salt and pepper, and fresh lemon juice, and blend. If the pesto is too thick, just add pasta water or vegetable broth to thin it out.
